Spiced Pineapple with Whipped Cream Cheese Yogurt and Ginger Biscuits

Ingredients
  

For Pineapple

  • 1 pineapple
  • 1 tsp Chinese five-spice
  • 2 tsp lemon zest
  • 1 tsp pink peppercorns crushed
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1 tsp allspice
  • 200 ml white wine
  • 100 grams soft, dark, brown sugar

For Whipped Cream Cheese Yogurt

  • 250 grams cream cheese
  • 100 grams natural yogurt
  • 1 1/2 tbsp vanilla yogurt
  • 1 star anise grated
  • 100 grams ginger biscuits (cookies) crushed

Instructions
 

For the Pineapple

  • Peel the pineapple.
  • Mix all of the other ingredients together, place everything into the bag, to be put into the vacuum, to seal the bag.
  • Seal and cook sous vide at 185°F for 12 hours.

For Whipped Cream Cheese Yogurt

  • Beat all the ingredients together until smooth and silky, set in the fridge overnight.
  • Build the dish and top with the crushed ginger biscuits.
